Anne's Baked Pasta with Tomatoes

I make this dish regularly and it is my go-to house-warning/baby-birth/get-well soon, comfort food recipe. Not only is it healthy, but it is easy, cheap, and requires ingredients you probably have in your pantry right now.
 
I got this recipe from The Martha Stewart Show, which I do not watch regularly (no offense, Martha, but sometimes your ideas are way to involved for me), but I sure am glad I tuned in to see this episode. Alan Alda (think T.V. show M.A.S.H) shared this dish following a trip to Italy, and it is absolutely delicious. Buttery, salty, chewy – pasta!

Without further ado: Baked Pasta with Tomatoes

Ingredients
  • 1 lb uncooked tube-shaped pasta (I used Whole Grain penne, but rigatoni or ziti would work too)
  • 4-14.5oz cans diced tomatoes (I used the fired roasted ones. Yummy. Any variety will work though)
  • ¾ C. Olive oil (I cut the oil to ½ a cup and it is still delicious. I’ve even tried making it without the oil and the recipe still works. However, I think ½ cup preserves the buttery flavor of the recipe and saves some calories.)
  • Salt and Pepper to taste
  • Grated or Shredded Parmesan or Romano Cheese to taste
Instructions:
Preheat the oven to 400 degrees. In a 9x13 baking pan, mix the box of uncooked pasta and the olive oil until all pasta is well covered. Add salt and pepper to season. Allow uncooked pasta to stand for at least twenty minutes (I usually make a salad in this time or, I cover the pasta early in the day and let it stand all afternoon. The longer it stands, the better). Then add all cans of diced tomatoes (undrained) and mix well. Cover with aluminum foil and bake for 45-60 minutes, stirring once or twice to be sure all of the pasta is evenly cooked. Top with extra parmesan cheese to serve.
